Summer is here in full blast and I constantly find myself trying to throw something cold down my throat to cool down. I can’t grab juice, I can’t make a quick cone of ice-cream, fruit is allowed once in a while and the heat is killin me! Trying to learn a new way of eating is quite an adjustment. I have started snacking on cocktail tomatoes from the fridge which is great, but they are quite pricey to survive on, so I have started getting into salads. Personally, I could not stomach any kind of greens before, but here we are making garden salad today and guess what? I am actually starting to enjoy it. I made one not too long ago with some smoked chicken and avo and it was delicious. So add that if you are looking for something a bit more wholesome. I try to incorporate the salad with my main meal so that I don’t go too heavy on the protein which I think is a common mistake with people just starting out on the banting diet / lifestyle.

So my daughter asks me why on earth am I doing a video on how to make a garden salad because she thinks it’s pretty obvious lol. I explained to her that when you know how to do something it appears pretty obvious but not to someone who isn’t used to doing it. Like me for example with trying to eat healthy lol.


To make the garden salad we will need the following:

  • Lettuce
  • Cucumber
  • Onion rings
  • Cocktail tomatoes
  • Feta cheese
  • Black pepper (optional)


  1. Wash and shred lettuce into strips.
  2. Cut cucumber into slices to form discs.
  3. Then cut the onion into slices to form rings.
  4. Now chop the feta into little cubes.
  5. Combine all ingredients including the cocktail tomatoes into a bowl and sprinkle with black pepper or banting friendly salad dressing if you prefer.
