Hello Banting Buddies!

Salad is not my favourite thing in the world to eat, but considering the heat that we have been experiencing lately, I thought salad would be a nice refreshing option.

Today we are making this lovely Tomato Avo Salad with a banting friendly dressing. You can eat this salad on its own or use it as a side dish with some grilled chicken, meat or fish. I made quite a big batch in this video but you can always adjust the quantities to suit your needs.

Salad Dressing Ingredients :

2 tblsp olive oil

2 tblsp lemon juice

½ tsp pink himalayan salt (to taste)

½ tsp garlic powder

¼ tsp ground black pepper (to taste)


1. Mix all ingredients in a small bowl until well combined.

Salad Ingredients :

1 avocado

3 tomatoes

1 cup cucumber

1 ½ tblsp fresh parsley

1 ½ tblsp fresh dill


1. Peel, chop and slice all of the ingredients and place into a large bowl.

2. Pour over the salad dressing.

3. Give it a good toss so that the dressing is well incorporated with the salad. 4. Enjoy 
